The following year, it returned to claim regional champion, cementing its status as one of Ethiopia’s finest natural coffees.Carefully hand-picked and sun-dried on African raised beds for nearly three weeks, the cherries undergo slow fermentation under the highland sun, concentrating sugars and aromatics deep into the beans.
