They grow wild among coffee trees at 1600-1800 masl. Shaded trees and microclimates yield slow maturation. Varieties include Typica, Abyssinia, and Sigararutang. Flavors are complex, with citrus acidity and caramel-chocolate tones. Aromas include sweet spice, cinnamon, and red berries. Gayonese women, aged 40s to 50s, pick the coffee. They pick in the mornings and again at midday. Harvesting occurs in Pantan Sintep, Blang Gele, and other areas. Mr. Sulihi processes the honey lot.
